2 Green Onions, finely chopped (I used a few slices of chopped red onion instead of green onions)
2/3 cup plant based vegan mayo, available in most grocery stores
1 Tsp Black Pepper
1 Tsp Celery or Garlic Salt
3 Tbsp Granulated Sugar
2 Tbsp Apple Cider Vinegar
Half of a cabbage cut into small pieces
2 large carrots grated or cut into small pieces
Salt to taste
Mix first six ingredients in a large mixing bowl to make dressing.
Stir in cabbage mix and toss to coat.
Add salt to taste.
