A wonderful vegan coleslaw that is very easy to make

Why I LOVE THIS RECIPE: I make this recipe in advance and love having it available in the fridge because it goes well with almost any meal.

INGREDIENTS AND DIRECTIONS:

2 Green Onions, finely chopped (I used a few slices of chopped red onion instead of green onions)
2/3 cup plant based vegan mayo, available in most grocery stores
1 Tsp Black Pepper
1 Tsp Celery or Garlic Salt
3 Tbsp Granulated Sugar
2 Tbsp Apple Cider Vinegar
Half of a cabbage cut into small pieces
2 large carrots grated or cut into small pieces
Salt to taste

Mix first six ingredients in a large mixing bowl to make dressing.

Stir in cabbage mix and toss to coat.

Add salt to taste.


RECIPE NOTES:

This is best made well in advance (early in the day) because it allows the flavors to come together
