Why I LOVE THIS RECIPE: It's different and a popular at gatherings

ATTRIBUTION: Inspired by my need to play in the kitchen, a discussion about the influences of local cuisines on traditional foods, and my love for spicy things.

INGREDIENTS AND DIRECTIONS:

2,3 medium sweet potato
1 medium sweet onion
1 Jalapeno pepper
2 egg2
1/4-1/3 cup flour
1/4 teaspoon baking powder
1/2 kosher salt, or to taste
vegetable oil for frying


RECIPE NOTES:
  1. Wash the potato and peel if desired. I keep them un-peeled as it saves time and adds fiber and color to the final product.
  2. Grate the potato, onion, and jalapeno pepper - in a food processor or by hand. Place in a medium bowl. For less heat, remove seeds and membranes
  3. Mix in the egg, flour, baking powder, and salt. You might need to adjust the amount of flour.
  1. Heat some oil in a large shallow pan over medium high heat.
  2. Gently slide 1/3-1/4 cups of batter to pan and lightly press down to flatten.
  3. Fry for about 4 to 6 minutes per side or until nicely browned.
  4. Remove and drain on paper towels. Continue with remaining batter.
  5. Serve hot/warm with sour cream
