ATTRIBUTION: My mom (Miriam's) recipe

Ingredients:
  • 1 lb ground beef
  • 1/4 cup matzo meal
  • 1/2 cup cooked rice
  • 1 egg
  • 1/4 teaspoon salt
  • 12 to 14 large cabbage leaves
  • 1 onion, diced
  • 1/4 cup lemon juice
  • 1/2 cup brown sugar
  • 1 can tomato sauce
  • 1/2 cup water

Directions:
  • Remove leaves from head of cabbage carefully
  • Place cabbage leaves in large pot, cover with water and simmer 5 minutes. Drain and cool.
  • Combine meat, matzo meal, rice, egg and salt
  • Place heaping tablespoon of meat mixture in center of each cabbage leaf, fold in sides to cover meat, and roll
  • Place rolls in large saucepan with open side down
  • Combine onion, lemon juice, brown sugar, tomato sauce and water
  • Pour combination over cabbage rolls
  • Cover and simmer 1-1/2 hours, basting occasionally
