Kreplach – as a side dish or in soup

Dough:
4 cups flour
1 1/2 cups water
2 tbsp. olive oil
2 tsp. salt

Instructions

  1. Mix all ingredients and knead until smooth.
  2. Shape into a ball, cover with damp towel and let rest for 1/2 hour.
  3. Divide ball 4 round balls.
  4. Roll one round at a time as thin as possible into a rectangle approximately 12"x  9"-- very, very thin. The dough is quite easy to work with.
  5. Cut into 3" squares.
  6. Fill with 1 heaping teaspoon mashed potato filling (recipe below).
  7. Moisten the edges with warm water and then bring one point of the square to the opposite corner. Press edges together.
  8. Boil kreplach in water of chicken soup for 20 minutes, uncovered.
  9. To serve with soup, ladle into bowls.
  10. To serve as a side dish, saute in butter and serve with sauteed onions.

Filling
Your favorite recipe for mashed potatoes
OR make your own.
4 large potatoes
1/3 cup warmed milk
2 tbsp. butter

Instructions

  1. Boil potatoes until soft
  2. Add to mixer with milk and melted butter.
  3. Mix until smooth
  4. Saute chopped onion until golden brown.
  5. Add to mashed potatoes.

Garnish
1 large onion
2 tbsp. butter

Instructions

  1. Saute a sliced onion until golden brown in a small amount of butter.
  2. Place on top of kreplach to serve.
