Why I LOVE THIS RECIPE: It's easy and oh so delicious and fresh-tasting.

Ingredients:
  • 1 baked 9
  • 4# sliced fresh peaches
  • 3/4 c to 1 c sugar, depending on sweetness of peaches
  • orange juice
  • 1/4 c cornstarch
  • 1 tsp. lemon juice
  • yellow food coloring

Directions:
  • Mix together sugar and peaches
  • Let stand one hour
  • Drain the juice and add enough orange juice to make 1 cup liquid
  • Bring liquid with cornstarch and lemon juice to a boil
  • Add yellow food coloring until the right color
  • Stir peaches into glaze and put into pie shell
  • Refrigerate

RECIPE NOTES:

Use 5-1/2# peaches for a 10" pie.  Adjust remaining ingredients accordingly.
