This is an easy version for the slow cooker. No frills - it just simmers away.

INGREDIENTS AND DIRECTIONS:

Chicken Soup – A Slow Cooker Version

1 large 5-6 lb chicken
1 large onion, peeled
I large carrot, peeled
1 large stalk celery

  1. Spray the slow cooker with olive oil spray
  2. Wrap chicken in cheesecloth and tie ends together
  3. Wrap vegetable in cheesecloth and tie together
  4. Place chicken and vegetable packet in the crockpot
  5. Add water ¾ of the way up the chicken
  6. Watch carefully and add more water as desired
  7. Cook on low for 6-8 hours

RECIPE NOTES:

Using cheesecloth to strain the soup produces a very clear chicken soup. Lift the whole chicken out from the stock and no further straining is necessary for a clear broth.
